Night markets are worth exploring for many reasons, but there is one local delicacy you can find at nearly every night market that you won’t want to skip – malasadas.
Malasadas are crispy, pillowy Portuguese-style doughnuts you can find at many bakeries in Hawaii. At night markets, you’ll find them fried up in streetside woks while you wait. These decadent delights are then tossed in a brown paper bag of cinnamon and sugar and served piping hot. There is almost nothing better than ripping into a fresh malasada and enjoying the sights and sounds of a night market in Hawaii.

Apple Stuffed Malasada Recipe
Malasadas can be found fried up in street-side stalls during night markets or artfully filled and served from Hawaii’s famous bakeries. Often coated in cinnamon and sugar or stuffed with tropical fruit and custard, this apple-stuffed version is delicious and made with familiar ingredients easily found year-round.
For the filling
- 4 green apples peeled, cored, diced
- 1 1/2 cups Kauai Coffee Apple Cinnamon Malasada coffee brewed and chilled
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup cornstarch, mixed with 1 tablespoon water
- 1 lemon, zested, juiced
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt to taste
For the dough
- 1/3 cup warm water
- 1 teaspoon sugar
- 1 package dry active yeast
- 6 cups all purpose flour
- 1/3 cup sugar
- 1 teaspoon salt
- 1 1/3 cup heavy cream
- 1 1/3 cup warm water
- 1/3 cup melted butter
- 8 eggs lightly scrambled
- High heat tolerant oil for frying (vegetable or peanut oil works well)
- Cinnamon and sugar for optional coating
For the filling
- Peel, core, and dice the apples.
- Add apples to a medium-sized bowl, mix in lemon juice and zest and set aside.
- In a large saucepan, combine Kauai Coffee, granulated sugar, brown sugar, cornstarch slurry, cinnamon, nutmeg, and salt.
- Bring to a gentle boil, then add chopped apples.
- Simmer on medium-low for 5-10 minutes until apples are soft and sauce is thickened. If the sauce is too watery, add a little more cornstarch.
- Once apples are soft, remove them from heat and set them aside to cool. The filling should be room temperature or cooler when assembling the malasadas.
For the malasadas
- Dissolve 1 teaspoon of sugar and active yeast in 1/3 cup warm water. Let stand until all other ingredients are mixed.
- In a large bowl, combine flour, 1/3 cup sugar, and salt.
- In another bowl, combine the heavy cream and water and then mix them into dry ingredients.
- Add melted butter and beaten eggs.
- Add the yeast mixture and combine all ingredients until a soft, shaggy dough is formed.
- Cover the dough and let sit in a warm spot until at least doubled in size (about an hour).
- Heat oil over medium heat in a large wok or Dutch oven until shimmering (about 325 to 375 degrees)
- Carefully drop heaping spoonfuls of dough into the hot oil and fry until golden brown and crisp.
- Remove from oil, lightly coat in cinnamon and sugar, and cool on a wire rack.
- When malasadas are cool enough to touch, use a paring knife to cut a small hole in the seam of the malasada and fill with the cinnamon apple mixture.
- Sprinkle with additional cinnamon sugar if desired or serve with a side of extra apple filling and enjoy!
Iced Apple Cinnamon Malasada Coffee with Cold Foam
It’s iced coffee season in Hawaii! Pour your Apple Cinnamon Malasada coffee over ice and add cold foam for a sweet treat.
- 1 cup Apple Cinnamon Malasada Kauai Coffee (cold-brewed or chilled)
- Crushed ice
- 1/3 cup half and half
- 2 teaspoons granulated sugar or sweetener of choice
- Pinch of cinnamon
- Fill a tall drinking glass with crushed ice
- Pour in 1 cup of chilled or cold brewed Apple Cinnamon Malasada Kauai Coffee
- Gently whip half and half and sweetener with a blender, handheld frother or French press
- Pour cold foam over coffee and top with a pinch of cinnamon.
- For a sparling twist, top iced coffee with bubbly water instead of cold foam and garnish with a sliced apple.
